HERPAC’s Mojama de Atún Extra is a Mediterranean delicacy crafted from premium-grade tuna loins, carefully caught off the coast of Spain. Known as the “jamón of the sea,” this traditional specialty delivers a rich, complex flavor and silky texture that has made it a sought-after treasure in Spain and beyond.

Following time-honored methods, each loin is salt-cured for 48 hours in sea salt before being air-dried. This slow curing process intensifies the natural flavor of the tuna while preserving its delicate tenderness.

HERPAC’s Mojama carries the “Mojama de Isla Cristina” label, ensuring strict control over production and the careful selection of only the finest tuna. This “extra” grade comes from the most prized part of the muscle, offering a softer texture and less pronounced marbling for a melt-in-your-mouth experience.

Certified with Protected Geographical Indication (PGI) status, this product is recognized for its excellence, authenticity, and distinctiveness -- a true taste of Andalusian maritime heritage.

We love to beautifully prepare thin slices of Mojama on a plate and garnish each piece with a high quality extra virgin olive oil. This softens the texture. It's also delicious alongside marcona almonds. Before eating, make sure to remove from refrigeration for at least 15 minutes.  

Mojama tuna should be stored in a cool and dry place away from direct sunlight. While it can be stored at room temperature, if you live in a hot place it's best to keep it in the fridge. If opened and you have more remaining, wrap it tightly in plastic wrap and store in the fridge.
