Ingredients

Serves 3-4 people.

  • Bonilla a la Vista chips (50g)
  • 5 large eggs
  • 1 1/2 teaspoons of piquillo pepper mix
  • Pinch of salt
  • Sliced Jamón de Bellota for decoration

Directions

1. Prepare the Eggs: Crack the eggs into a mixing bowl. Whisk them vigorously until smooth.

2. Add Chips: Crumble the entire 50g bag of Bonilla a la Vista chips into the bowl with the beaten eggs.

3. Mix Well: Stir the mixture thoroughly, ensuring that the chips are evenly distributed and slightly broken down. Use a fork to help incorporate the chips.

4. Add Piquillo Pepper Mix: Incorporate 1 1/2 teaspoons of piquillo pepper mix into the egg and chip mixture. Stir well to evenly distribute.

5. Cook the Tortilla: Heat a non-stick frying pan over medium heat and add a drizzle of oil. Once hot, pour the egg and chip mixture into the pan, spreading it out evenly. Let it cook for about 1 minute or until the edges start to set.

6. Flip the Tortilla: Carefully flip the tortilla using a plate to assist you. Slide the tortilla onto the plate, then invert the frying pan over the plate and flip both together. Return the pan to the heat and slide the tortilla back into the pan to cook the other side. Cook for about 40 seconds or until fully set.

7. Rest: Remove the tortilla from the pan and let it rest for about 10 minutes to allow it to set and cool slightly.

8. Serve: Once rested, transfer the tortilla to a serving plate. Arrange slices of Jamón de Bellota on top for decoration.

9. Enjoy: Serve the Tortilla with Bonilla a la Vista chips warm or at room temperature. Slice it into wedges and enjoy the delicious combination of flavors and textures!
