Queso Idiazábal Wedge (PDO)
This wedge of queso idiazábal is a wonderful cheese that comes straight from the Basque Country in Northern Spain. Made using strictly sheep's milk (leche oveja), it has a deliciously mellow smokey flavor. This specific wedge won a world cheese award, so it is definitely worth the try.
We love this cheese sliced in triangles or cubed and served alongside cured meats and fruit preserves. Try pairing it with some membrillo to find a delicious balance between the smokey and sweet flavors. Make sure to have a crisp glass of your favorite Spanish red wine on the side.
This cheese is actually name after the village of Idiazábal. As a result, it has received Spanish D.O. (Denominacion de Origen) since 1987.

Recommended Pairings
There are many great ways to serve your idiazábal cheese. First, ensure it is at room temperature. You can then add it to a cheese platter (cutting it in triangles vertically along the brine) paired alongside picos artesanos or crusty bread. You can also add your sliced idiazábal cheese to tapa dishes or pintxos, pairing it with jamón serrano, chorizo ibérico or Spanish vegetables. Don't forget to add a nice Spanish wine to your spread!
Refrigerate upon arrival. Keep stored in fridge before and after consuming. Before enjoying your cheese, let it sit outside of cold storage for 30 minutes. If storing your cheese after consuming, wrap it tightly in plastic wrap or cloth and place back it back in refrigeration.
