Marinated White Anchovies. Boquerones are white anchovies from Spain. They possess more of the qualities of white fish than a “typical” salt cured anchovy. They are fresh, mild-tasting and due to the addition of vinegar, have a slightly pickled flavor that enhances the sensation that you’re eating fish. They are a simple yet satisfying tapa and are ideal for adding on salads or canapes.
You can prepare these boquerones by garnishing them in a bit of high quality finishing olive oil, and covering them in some freshly chopped garlic and parsley. One of our favorite appetizers from Spain!
