These fish go on to the expert hands of female artisans who manually de-bone them and then preserve them in salt. These filets are then transferred to mature in cellars for 6 to 8 months. Enjoy them on their own, on toasted bread with tomatoes. Use them in salads, or pasta dishes or to enhance the flavor in sauces and tapenades.
