Despaña Traditional Chorizo Quesadilla

This Despaña Traditional Chorizo Quesadilla recipe is a delicious fusion of classic Spanish and Mexican ingredients!   1. Preheat a large nonstick oiled skillet over medium heat.
  2. Toast each tortilla on both sides in the skillet, one at a time. Set aside. 
  3. Reduce the heat to low. Add tortilla back and sprinkle ¼ cup of shredded cheese evenly over the full half.
  4. Add the sliced Despaña Traditional Chorizo and sliced guindilla peppers on top of the cheese.
  5. Add the other toasted tortilla side over the filling and press down gently with your hands or a spatula. 
  6. Cover the skillet and cook for 2 minutes.
  7. Carefully flip the tortilla over and cook for another 2 minutes, until the cheese is melted and the tortilla is lightly browned. 
  8. Remove from the heat and let the quesadilla cool for a minute before cutting it into 4 slices. 
  9. Serve with a fresh tomato sauce on the side!
