Don Bocarte makes this product from fresh tuna that's caught using the traditional trap method of "almadraba" -- an elaborate and ancient technique that is used to catch this rare fish. It's sourced  from the Atlantic Ocean, off the coast of Barbate Cadiz, between April, May and June.
