Fire up the grill! This is not your average hot dog. Our Chistorra Dog is a bold, flavorful upgrade to the American cookout staple, made with Despaña Brand Chistorra, a smoky, paprika-rich Basque-style sausage. This easy yet elevated recipe fuses Spanish ingredients with American grilling flair, perfect for summer grilling, game days, or anytime you want to impress.

Instead of the usual hot dog, we pan-sear or grill chistorra until it's crisp on the outside and juicy inside. Nestled in a buttery, toasted potato roll and topped with garlic sour cream, chopped piparra peppers, and fresh chives, the result is a layered bite of smoky, tangy, creamy perfection.

Ingredients

Serves 4 People

  • 4 Despaña Brand Chistorra sausages
  • 4 Martin’s Potato Roll hot dog buns
  • 2 tablespoons unsalted butter, for toasting buns
  • ½ cup sour cream
  • 1 clove garlic, finely grated
  • ¼ cup piparra peppers, finely chopped
  • 2 tablespoons fresh chives, chopped

Directions

1. Prepare the Garlic Sour Cream

In a small bowl, combine sour cream with grated garlic. Mix well, then refrigerate until ready to serve. This adds a creamy, garlicky kick that balances the smokiness of the sausage.

2. Toast the Buns

Using a sharp knife, slice a thin strip off the top edge of each bun. In a skillet or on the grill, melt the butter and toast the cut edge until golden and crisp. Set aside.

3. Cook the Chistorra

  • Grill Option (Recommended): Preheat your grill to medium-high. Grill chistorra sausages for 5–7 minutes, turning occasionally, until they’re browned and cooked through.

  • Pan Fry Option: Heat a skillet over medium-high heat. Cook the chistorra for 6–8 minutes, turning occasionally, until nicely seared and cooked through.

4. Assemble the Chistorra Dogs

Place one grilled chistorra sausage in each toasted bun. Top generously with a spoonful of garlic sour cream, then sprinkle with chopped piparras and chives.

Thin Spanish-Style Sausage, typical of the regions of Navarra, Aragon and the Basque Country. Despaña Brand Chistorra is made with pork, Pimentón De La Vera picante, and a blend of spices which gives it a complex flavor profile. It has a natural skin casing and is a bit spicier than our traditional sausage due to its higher concentration of pimentón. 

It's absolutely perfect for grilling and adding to sandwiches. We also love it with egg and potato dishes like "huevos rotos con chistorra."
