Hola tortilla lovers! Are you ready to be transported to the sunny streets of Spain? Look no further than this traditional Spanish recipe with a twist: Tortilla Española with Despaña Chistorra. You’ll be enjoying the flavors of Spain in every bite. 

Tortilla Española, also known as a Spanish Omelette, is a classic dish that has been delighting Spanish palates for generations. It’s a hearty and delicious combination of potatoes, eggs and onions that have been cooked and fried to perfection! But this time around, we are taking it up a notch by adding our famous Despaña Chistorra, a tasty Basque sausage that is bursting with flavor. 

Can you picture it now? Crispy and golden potatoes, caramelized onions and the savory goodness of Despaña Chistorra….all encased in a fluffy omelette. Featuring a rich blend of textures and tastes, this unique twist on the traditional Tortilla Española will leave you craving more!

Not only is this recipe incredibly tasty, but it’s also surprisingly simple to make! Many might be intimidated by the process (especially the tortilla flip!), but rest assured it can be completed by anyone at any level. There are just a handful of ingredients and a few easy steps – you’ll be able to chef up a mouthwatering Tortilla Española with Despaña Chistorra that will impress both your family and friends. 

So let’s do it, let’s dive into this recipe together! Get your non-stick skillet ready, gather the ingredients below and prepare to amaze yourself and all of those around you. Vamos! 



  1. Preheat the olive oil in a non-stick frying pan with rounded sides to around 400º Fahrenheit.
  2. Cut the potatoes into small cubes.
  3. Slice the sweet onion into thin julienne strips.
  4. Chop the Despaña Brand Chistorras into small pieces.
  5. Cook the potatoes in olive oil until they start to turn golden brown.
  6. Add the sweet onion to the pan with the potatoes and cook until the onion is translucent.
  7. In a separate pan, cook the chopped Despaña Brand Chistorras in olive oil until they are golden brown. Remove from heat and strain off the excess fat.
  8. Whisk together the eggs and egg yolks until they are well combined.
  9. Strain the potato and onion mixture and add it to the bowl with the eggs.
  10. Add the chistorra and mix everything together until well distributed.
  11. In a high-heated pan, add the mixture and cook until it starts to set.
  12. Flip the tortilla over with the help of a plate and cook for another minute or so on the other side.
  13. Serve and enjoy!

Despaña Brand Chistorra is made with pork, Pimentón De La Vera picante, and a blend of spices which gives it a complex flavor profile. It has a natural skin casing and is a bit spicier than our traditional sausage due to its higher concentration of pimentón. 

It's absolutely perfect for grilling and adding to sandwiches. We also love it with egg and potato dishes like "huevos rotos con chistorra."
