This is an absolutely classic dish and beautifully combines the rich and smoky flavors of Despaña Chorizo with perfectly cooked eggs and crispy potatoes. Whether you’re looking for a hearty breakfast, or a simple but filling lunch, this easy recipe is sure to taste amazing and impress guests! 

What are Huevos Rotos (Broken Eggs)? Traditionally, huevos rotos consist of crispy fried potatoes and are topped with broken fried eggs and served with a variety of accompaniments, such as chorizo, jamón or vegetables. In our special version, we have decided to add our flagship product, Despaña Traditional Chorizo, to elevate the plate and make it even more irresistible. 

How do you eat Huevos Rotos con Chorizo? Eating them is always an experience in itself. Once the dish is served and plated beautifully, use your fork to gently break each yolk and then mix in all of that goodness into the potatoes and chorizo. The idea is to let the yolk coat the ingredients within – this creates a delicious medley of flavors and textures! The dish can be shared on one plate or divided into many – just make sure you dig in and enjoy the crunchy potatoes and the savory chorizo.

It has become hugely popular throughout Spain – a staple in bars and restaurants nationwide. The dish beautifully showcases the rich and authentic ingredients of Spain, while also demonstrating how delicious simple cooking can be.

  1. Peel the potatoes and cut them into small cubes or thin slices.
  2. Heat the olive oil in a large skillet over medium heat. 
  3. Add the potatoes to the skillet and season lightly with salt. Cook them until they're golden brown and crispy, stirring occasionally. This may take about 10-15 minutes. Remove the potatoes from the skillet and set aside. 
  4. In the same skillet or a separate one add the sliced Despaña Chorizo. Cook the chorizo for a few minutes until it releases its oils and becomes slightly crispy. Remove the chorizo from the skillet and set it aside.
  5. Using the same skillet or a separate one, cook the eggs. Fry them sunny side up in olive oil (coating the top of the eggs in olive oil if desired.)
  6. Once the potatoes, chorizo and eggs are all cooked separately, it’s time to assemble the final dish. 
  7. On a serving plate, layer the cooked potatoes, followed by the Despaña Chorizo. 
  8. Top the potatoes and chorizo with the cooked eggs.
  9. Garnish with salt to taste. 
  10. To serve, slice open the egg yolks and mix them into the potatoes and Despaña Chorizo. Enjoy!
