This 3 months aged cheese is distinct in flavor, and is known for its rich and buttery texture. It uses the milk of a manchega sheep, so it does resemble that of a manchego cheese.聽 It has a lush texture and a herbaceous and nutty flavor.

There are many great ways to serve your oveja al romero cheese -- a classic sheep's milk cheese in Spanish gastronomy. First, ensure it is at room temperature. You can then add it to a cheese platter (cutting it in triangles vertically along the brine) paired alongside picos artesanos, crusty bread or a quince paste garnish. You can also add your sliced oveja al romero cheese to tapa dishes or pintxos, pairing it with jam贸n serrano, chorizo ib茅rico or Spanish vegetable preserves. Don't forget to add a nice Spanish wine to your spread!

Refrigerate upon arrival. Keep stored in fridge before and after consuming. Before enjoying your cheese, let it sit outside of cold storage for 30 minutes. If storing your cheese after consuming, wrap it tightly in plastic wrap or cloth and place back it back in refrigeration.
