Typical of the regions of Salamanca, Segovia, and Valladolid, we make our own brand of Cantimpalo using thickly ground pork meat and sweet Pimentón de La Vera, which gives it that intense bright red color. Serve this chorizo thinly sliced with a crusty, rustic bread and cheese.

Salchichon: Ready to be sliced and eaten, the primary difference between Chorizon (cantimpalo) and Salchichón is that we do not use Pimentón de La Vera in this recipe. Our Despaña Brand Salchichón is made with small peppercorns giving this meat a delightful, peppery taste. So savory and delicious, it is perfect on its own, as part of charcuterie and cheese platter, or in a bocadillo (sandwich). Any way you slice it, it’s delicious.
